I love making myself some delicious treats and warming drinks in the cold winter months. I've experimented for years with Chai recipes and have found a beautiful one that I make that even my boys love to drink. You end up making a concentrate (unsweetened) that can last in the fridge for a couple months, that you can just add to your water/milk mixture, adding honey, warm up and VOILA, it's delicious...

Deliciously Warming Chai

3 tsp cinnamon, ground

2 tsp cardamon, ground

2 tsp dried ginger root (chopped up fresh ginger root can be used)

2 tsp dried orange peel

2 tsp dried astragalus root (for great immune support)

1 tsp whole black peppercorns

1 tsp whole cloves

1 whole cinnamon stick

Prepare Concentrate:

Put 8 cups water in a pot and add all ingredients above. Allow

mixture to simmer for 2-3 hours. Pass through strainer when finished.

This becomes your chai concentrate and will last in the fridge for 2-3

weeks.

To make your chai:

Simmer 1 cup of water, 1 cup of whole milk (or any milk substitute), 6

Tbsp of Chai mixture from above (or more if you want it

stronger), 2 tea bags of your favourite black tea, and 1-2 tsp of honey

to taste. Allow mixture to simmer for 10 minutes. Enjoy!
